Although pumpkin spice has established itself as the flavour of fall, we couldn’t pass up sharing this delicious pumpkin tart recipe. Not only will the notes of cinnamon, nutmeg, and cloves make you feel right at home, but infusing both the tart and the filling will ensure you’re getting everything out of your edible. Follow along with this recipe and learn how to create twice-infused pumpkin tarts, with every bite guaranteed to be packed with cannabinoids.
Infused pie dough
- 2 cups of flour
- 1/2 cup cannabutter
- 1/2 cup of cold water
In a dough mixer, stand-mixer with a dough hook, or in a large bowl with your hands, mix together all ingredients. Knead the mixture until it comes together in a stretchy, but not dry, ball of dough. Cover the dough in plastic wrap and place it in the fridge for around half an hour. Once firm, cut the dough in half and begin rolling out each portion. The dough should be rolled out to around 1/4″ thick. With a circular dough cutter (or a glass turned upside down), begin cutting the dough into roughly 4″ circles. Lightly grease your muffin tin, and firmly press the dough rounds into place. The tray can be placed in the fridge while the filling is prepared.
Infused pumpkin filling
- 1 can of pumpkin puree (15 ounces)
- 1 can of sweetened condensed milk (14 ounces)
- 2 eggs
- 1 teaspoon of cinnamon
- 1/2 teaspoon of nutmeg
- 1/2 teaspoon of salt
- 1/8 teaspoon of cloves
- Cannabis oil (dosing to preference)
In a large mixing bowl, pour the sweetened condensed milk on top of the pumpkin puree. A top that, add in the cinnamon, nutmeg, salt, and cloves. Next, beat and pour in both the eggs. With the pie dough already giving us a hefty dose of THC, we opted to use CBD oil for the pumpkin filling. The oil we used contained 25mg/ml of CBD, and we want each tart (12 total) to have 25mg of CBD. Therefore, we’ll drop in 12ml of CBD into the filling mixture. Whisk to combine all the ingredients until a smooth batter forms. Drop in the batter into the dough-lined muffin tray. Bake the tarts at 375F for approximately 15 minutes. These tarts will be delicious as is, but feel free to whip up some heavy cream to top off this super-potent dessert.
